I had my first Deep Vein Thrombosis (DVT) and Pulmonary Embolism (PE) in 2006. Since taking up triathlon training, I’m working on eating better while navigating vitamin K concerns. The focus is not vegan, vegetarian, gluten free, etc – there’s always options for substitutions to accommodate health and lifestyle. Ideally, the food will allow for both pleasurable eating and high nutritional content. That means little to no requirement for supplements if possible.
