Lemon Bars

A tart treat!  No vitamin K concerns.

Health Information

Prerequisites

  • Baking dish (8×8+)
  • Mixing bowl
  • Pastry cutter or 2 knives
  • Whisk

Ingredients

Bottom

  • Flour: 1.75 cups, all purpose
  • Sugar: 0.667 cup, brown
  • Salt: 0.25 teaspoon, coarse
  • Butter: 0.75 cup

Topping

  • Lemon juice: 0.75 cup, fresh
  • Sugar: 1.333 cups, granulated
  • Flour: 3 tablespoons, all purpose
  • Eggs: 4
  • Zest of one lemon
  • Sugar: powdered

Instructions

Food Preparation

  1. Line an baking dish with foil
  2. Blend bottom mixture (butter, flour, brown sugar and salt) with a pastry cutter until it resembles a coarse meal
  3. Pat the blended bottom mixture firmly into the baking dish
  4. Whisk together topping mixture (eggs, sugar, flour, lemon juice and zest)

Cooking

  1. Heat the oven to 350°F
  2. Bake bottom for 20 minutes, or until lightly browned
  3. Pour the topping over the bottom
  4. Bake for and additional 25-30 minutes
  5. Loosen around edges, and allow to cool
  6. Sift sugar (confectioners’/powdered) over the top
  7. Cut into squares
  8. Serve
