Ingredients

  • Black beans: 0.25 cup per person

Instructions

Food Preparation

  1. Spread the beans out on a dark surface to remove debris, stones, and damaged beans

Cooking

  1. Add the beans to a pot
  2. Add 2-3 cups of water per cup of beans
  3. Boil the beans for 2 minutes
  4. Let the beans stand for at least 2 hours
  5. Drain the soaking liquid
  6. Rinse the beans with clean water
  7. Add 3 cups of fresh water or broth for each cup of dried beans to the pot
  8. Bring the beans to a boil
  9. Reduce to a simmer, partially covering the pot, for 1-1.5 hours

Tips

  • The first stage of boiling reduces the raffinose-type oligosaccharides – sugars associated with causing flatulence
