  • Lentils: 0.25 cup per person, green or red


Food Preparation

  1. Spread the lentils out on a dark surface to remove debris, stones, and damaged lentils
  2. Rinse lentils under water


  1. Add 2-3 cups of water per cup of lentils to the pot
  2. Bring the water to a boil
  3. Add the lentils
  4. When the water returns to a boil, turn down the heat to simmer and cover.
  5. Cook time depends – 30 minutes for green, 20 minutes for red
  6. Test a few before removing them from the stove top for desired texture (firm for salad/soup typically)


  • Lentils added to boiling water are easier to digest than added to water that has yet to boil
