Ingredients
- Navy beans: 0.25 cup per person
Instructions
Food Preparation
- Spread the beans out on a dark surface to remove debris, stones, and damaged beans
Cooking
- Add the beans to a pot
- Add 2-3 cups of water per cup of beans
- Boil the beans for 2 minutes
- Let the beans stand for at least 2 hours
- Drain the soaking liquid
- Rinse the beans with clean water
- Add 3 cups of fresh water or broth for each cup of dried beans to the pot
- Bring the beans to a boil
- Reduce to a simmer, partially covering the pot, for 1-1.5 hours
Tips
- The first stage of boiling reduces the raffinose-type oligosaccharides – sugars associated with causing flatulence
