Salsa

This is one of the recipes that I’ll provide but warn against following too closely for those on blood thinners because:

  • Cilantro/Coriander has a decent amount of vitamin K – 1/2 cup contains 24.8 mcg of vitamin K (32% of the Daily Value)
  • Jalapenos contain 1.4 mcg of vitamin K per pepper – 3 peppers is 4.2 mcg, 6% Daily Value
  • Serranos contain 0.7 mcg of vitamin K per pepper – 8 peppers is 5.6 mcg, 7% Daily Value
  • Avocado: 1 cup contains 31.5mcg of vitamin K, 35% Daily Value

If you’re not big on spicy food, all the better.  But salsa is one of those things you can eat a lot of without realizing.

Ingredients

  • Tomato sauce: 2x 8oz/240 mL cans
  • Tomatoes: 8
  • Onion: 6, green
  • Onion: 1, red
  • Garlic: 1 clove
  • Cilantro/Coriander: 1/2 cup
  • Jalapeno pepper: 3
  • Serrano pepper: 8
  • Avocado: 1
  • Cumin: 1 teaspoon
  • Cayenne: 1 teaspoon
  • Lime juice: 1 tablespoon

Food Preparation

  1. Chop everything up
  2. Combine
  3. Enjoy

Tips

  • Get good tomatoes!
