Scrambled Egg Pita Pocket

This combines a couple of smaller recipes.  Super quick, especially if you have leftovers you can incorporate.

Serves 2.

Health Information


  • Frying pan


  • Scrambled eggs (recipe)
  • Sauteed mushrooms/onion/shallot (recipe)
  • Guacamole (recipe)
  • Roasted pepper
  • Tomato
  • Corn
  • Cheese: Feta, blue, etc
  • Whole wheat pita (or tortilla wrap)


Food Preparation

  1. Cut pita in half.  Skip this step if using tortilla
  2. Apply guacamole
  3. Dice roasted pepper


  1. Cook (or warm) eggs in pan
  2. Add sauteed stuff, red pepper, tomato, corn, etc
  3. Add pan contents to pita halves
  4. Add cheese


  • Pita or tortilla, which is healthier?  Depends on who you ask/read but there’s more literature on tortillas.
  • Additional protein suggestions include diced chicken breast, Chorizo
