Pick your pasta (type and details like whole wheat, gluten free, etc), using guacamole as the sauce – garnished with cherry tomatoes and corn. Optionally, add chicken for protein.

Ingredients
Sauce
- Avocados: 2x, ripe, seeded
- Basil leaves: 1/2 cup
- Garlic: 2 cloves
- Lemon juice: 2 tablespoons
- Extra virgin olive oil: 1/3 cup
- Salt
- Black pepper
Misc
- Pasta of choice: spaghetti, rotini, macaroni, etc. Preferably whole wheat
- Cherry tomatoes, halved
- Corn kernels, drained/thawed
- Optional: chicken breast, cubed
Instructions
Cooking
- Combine avocados, basil, garlic and lemon juice
- Season with salt and pepper, to preference
- Add olive oil in a slow stream until emulsified
- Boil water in a pot
- Cook pasta to preference/package instructions
- Drain water
- Optional: Cook cubed chicken
Serving
- Dole out sauce on top of pasta per serving, garnish with tomatoes and corn (additionally, chicken)
- In a large bowl, combine pasta, sauce, tomatoes and corn (additionally, chicken)
