Avocado Pasta

Pick your pasta (type and details like whole wheat, gluten free, etc), using guacamole as the sauce – garnished with cherry tomatoes and corn.  Optionally, add chicken for protein.

Serves 4.

Health Information


  • Food processor or blender
  • Pot (to cook pasta in)
  • Optional: Large bowl



  • Avocados: 2x, ripe, seeded
  • Basil leaves: 1/2 cup
  • Garlic: 2 cloves
  • Lemon juice: 2 tablespoons
  • Extra virgin olive oil: 1/3 cup
  • Salt
  • Black pepper


  • Pasta of choice: spaghetti, rotini, macaroni, etc.  Preferably whole wheat
  • Cherry tomatoes, halved
  • Corn kernels, drained/thawed
  • Optional: chicken breast, cubed



  1. Combine avocados, basil, garlic and lemon juice
  2. Season with salt and pepper, to preference
  3. Add olive oil in a slow stream until emulsified
  4. Boil water in a pot
  5. Cook pasta to preference/package instructions
  6. Drain water
  7. Optional: Cook cubed chicken


  1. Dole out sauce on top of pasta per serving, garnish with tomatoes and corn (additionally, chicken)
  2. In a large bowl, combine pasta, sauce, tomatoes and corn (additionally, chicken)
