Sweat Vegetables Before Making Soup for a Smoother, Creamier Texture

Sweating your veggies is easy: simply put your prepped vegetables in a pot on low heat. Keep the lid on, and let them cook slowly. By keeping the lid on, you use their own liquid to “sweat” (aka steam) them. The technique is called à l’étouffée in French cooking, and it leads to soups and bisques with depth of flavor. You can also apply this to purees that are part of other dishes—like mashed potatoes, for example.

Ingredients:

  • Tortilla wrap
  • Turkey (veganize as you see fit – tofu?  Tofurkey?)
  • Mashed potato
  • Stuffing
  • Corn
  • Optional: Cranberry sauce (shown), gravy, salsa

  • Replace the tortilla with lefse and you got a tasty burrito
  • Butter the tortilla, crisp in a panini grill

Sweet Potatoes = Astronaut Food

Although astronaut cuisine has improved considerably over the decades, this year’s Thanksgiving menu aboard the International Space Station still consists mostly of freeze-dried and dehydrated dishes. But future missions will likely have access to one fresh vegetable: sweet potatoes.

Shredded or mashed potato, seasoned as you like.  If I’m using sweet potatoes, I have to use cinnamon…

Depending on your waffle/grill, coat with a non-stick spray if necessary.  High heat, press and cook to desired texture – crispy/crunchy might take 15-20 minutes, depending on how much you put in.

If you made too much, freeze the leftovers.
